Rick Bayless "Mexico: One Plate at a Time" Episode 711: A Whole New Enchilada
Rick’s out to dispel the notion that an enchilada is all about smothering tortillas in sauce and gooey cheese. At Café Azul y Oro in Mexico City, he shows us the iconic Mexican version of the dish: a corn tortilla in a red mole sauce and rolled around a light, simple chicken filling. From that classic formula things can, of course, get more inventive and Rick shares with us one of the more unusual, though still classically grounded enchiladas on Chef Ricardo Muñoz-Zurita’s menu: an enchilada of jamaica, or dried hibiscus flowers that tastes like a cross between pickled beets and cabbage. From there he takes us to Café Tacuba, a Mexico City Institution since 1912, where the signature Enchi...

Everyday Steak Tacos | Rick Bayless Taco Manual
Просмотров 62 тыс.16 часов назад
Say it’s Friday night and you want to do something a little special. Not “dinner party” or birthday special, but at least a feel-good exclamation point on a finished week. That’s the time for these steak tacos. All meat is special, but the cut I’m calling for here is more accessible than what you’d serve for a big steak cookout. Here's the recipe: www.rickbayless.com/recipe/everyday-steak-tacos...
Rick Bayless "Mexico: One Plate at a Time" Episode 710: Tacos Hola!
Просмотров 10 тыс.21 час назад
We find Rick and his daughter, Lanie, at the Mexico City’s colorful Sonora Market, an emporium of medicinal herbs and the best place in town to buy cazuelas, the beautifully rustic earthenware cooking and serving casseroles that define a whole class of stews and taco fillings. We tend to think of taquerías for their familiar grilled and griddled fillings, like carne asada. But, Rick explains, t...
Oaxacan-style Grilled Pork Cecina | Rick Bayless Taco Manual
Просмотров 11 тыс.День назад
On practically any trip to Oaxaca, your tastebuds will encounter three flavors: the bright complexity of Oaxacan chorizo, the mellow savoriness of tasajo (thin-cut, half-dried beef) and the sweet-tangy richness of pork cecina enchilada. In Oaxaca City’s famous Smoke Alley (Pasillo de Humo), a couple dozen vendors display those three specialties, waiting for you to tell them how much of each you...
Rick Bayless "Mexico: One Plate at a Time" Episode 709: Confessions of a Carnita-vore
Просмотров 16 тыс.14 дней назад
Carnitas - chunks of pork cooked slowly in lard until they’re golden and crisp on the outside and meltingly tender inside - are a weekend family tradition in Mexico. At the Medellin Market in Mexico City, Rick gives us an insider’s look at how they’re made every Saturday and Sunday in a huge copper cauldron, and served up with fresh corn tortillas and crispychicharrón (pork cracklings). But wha...
Let's Make a Rhubarb-Jamaica Crumble Tart with Fresh Ginger

I came to know rhubarb when I enrolled in graduate school at the University of Michigan. Rhubarb is a northern crop, certainly nothing I encountered in the more temperate clime of my Oklahoma upbringing. You can imagine my surprise when I started seeing it on Mexico City restaurant menus. Assuming it was imported, I was corrected by a chef friend who filled me in on how beautifully it grows in ...
Rick Bayless "Mexico: One Plate at a Time" Episode 708: The Case for Quesadillas
Просмотров 18 тыс.21 день назад
What could be better than a freshly made, gooey, warm quesadilla? Rick answers the question by showing us how to make the flour tortillas from scratch. What could be better than that?Well, actually, in Mexico, Rick explains, quesadillas and flour tortillas have nothing to do with each other. He takes us to the Bazar Sabado, a charming colonial-style labyrinth of handicrafts shops in the heart o...
Torta de Jamón - A Better Ham Sandwich
Просмотров 42 тыс.21 день назад
A well-made ham torta makes a ham sandwich look puny. First, it’s the bread, the telera with its crustiness and soft crumb. And there are the bean spread and tangy crema, the avocado and tomato, the pickled chiles and the cheese-either crumbly fresh or gooey melted. There’s a lot going on here. Here's the recipe: www.rickbayless.com/recipe/torta-de-jamon-con-todo/ ~Order Tacos Straight to Your ...

Hey they look tasty - nothin’ wrong with the color of his skin or him puttin his own twist on Mexican food (my Japanese friends do the same thing with soul food and sure it’s different, but fusion and altering things here and there to work with your tastes is everyone’s own prerogative- if it ain’t your taste, don’t hate - it’s bound to be someone else’s and they’ve got just as much of a right to make food that tastes good to them as you do to make food that tastes good to you! ✌🏾) - idk why we still actin’ in 2024 like that’s gonna affect his cooking skills any more than more melanin’s gotta automatically mean more flavor or even good cooking 🤦🏾‍♀️ (bc y’all my gramma and great aunts are as melinated as they can be an not one of them can take heat for shit 😅)

@@xgymratx The fact that you brag about refusing to or being unable to read a whole comment I think reflects much more on you, your ability to focus, and your attention span (which is a further sign you should probably go touch grass) than anything else - kinda embarrassing for you that you’d even view that as something to brag about…regardless, racist stereotypes are racist stereotypes- I say leave the guy alone as long as he’s making good food and if you’re not in literally middle school maybe grow up out of the need to view everything in terms of skin tone… if the skin color of the person makin food is something that matters that much to you, then maybe check your own biases and ingrained hate and grow up a bit ✌🏿

As a former Traeger+ user, I must say that switching to Asmoke has been a game changer. The precise temperature control of Asmoke, thanks to the FlameTech patent and dual sensors, has made my grilling experience much more consistent and enjoyable. I was always a fan of the smoky flavor imparted by wood pellets, and the various flavor options Asmoke offers has taken my grilling game to the next level. The fact that it's portable and battery-powered means I can take it on my RV trips and tailgate parties. The convenience, versatility, and superior cooking results of Asmoke are unmatched. Plus, the environmental friendliness of using recycled wood materials as fuel aligns with my lifestyle. Can't wait to experiment more with my Asmoke grill. #Asmoke

Great video. Loved the dish at the end, but I would have wanted to hear from the Hispanic chef as to what he thought would be the best wine pairing. All but him agreed on the wine. He either did not drink wine, did not taste the wine, or did not seem to be included in the final decisions. I did not see anyone in the video ask him what he thought. After all, this is Mexican inspired food that he experienced from childhood. I would like to think that he can taste things I cannot when it comes to the many cuisines of Mexico. That would go far in wine pairing.
